Yeast-Derived Alcohol Dehydrogenase Lyophilized from Innovative Research is a metalloenzyme containing four tightly bound zinc atoms per molecule (Vallee and Hoch, Proc. Natl. Acad. Sci. USA, 41, 327, 1955). The optimum pH for the enzymatic oxidation of ethanol is 8.6-9.0 and is closer to 7.0 for the reduction of acetaldehyde. This is a lyophilized powder .
